Delicious, easy, melt in your mouth shortbread recipe and just what Ms Mills ordered as a pick me up during the LC and JC exams! A great one for the tea break. *P.s they dunk well*!

Shortbread Recipe

Unbelievably tasty and easy, these could very well be the pick me up you need with that cup of Lyons/Barry’s tea this week!

Ingredients:

125g Plain Flour

60g Cornflour

½ tsp of vanilla essence

125g unsalted Butter (softened)

60g of Caster Sugar

Sprinkle of caster sugar for decoration ♥

Method ( Miss what do I do?) 

  • Preheat the oven at 160°c/ 325 F°/ Gas Mark 3.
  • Cream the butter and sugar together until light and smooth using  an electric mixer or wooden spoon if you need to extend your study break a little bit longer.
  • Sieve the flour and the cornflour and mix with a wooden spoon until you form a dough.
  • Gather the mixture together with your hands.
  • Dust some flour onto your clean work surface and press it out using your fingertips until approximately 1.5 cm thick.
  • Dust your cookie cutter with flour and cut out the dough into individual shortbread biscuits
  • Spread them evenly on a lined baking sheet with parchment paper!
  • Place the baking sheet into the fridge for a while, roughly 20 minutes to cool.
  • Bake in a pre-heated oven 160°C/325°F/Gas 3 for about 20 minutes or until a light golden brown colour.
  • Allow to cool in the baking tin for 5 minutes.
  • Sprinkle a little bit of caster sugar on top then transfer your biscuits to a wire rack to cool.
  • As soon as shortbread is cold, store in an airtight tin.

Put on the kettle, scald the cup put in the Lyons tea bag, brew for 1 minute , add your milk, stir gently, feet up and enjoy a homemade  biscuit made with care.

The All-Island Cook Off 7th May 2014- Fine Dine at Mine Cookery Competition

Taking the “OUCH” out of fish and chips!- Oh my cod I can’t believe it!

This competition does exactly what it says on the tin- a cookery competition that gives students the opportunity to create tasty, healthy, honest, flavoursome and affordable restaurant meals at home. From the beginning we were well looked after by all the assistants in St Angela’s College Sligo in a bright and welcoming environment.  Although a very busy kitchen with many pots and pans rattling, all students were put at ease and were offered fantastic support.  Students were assigned a workstation where the magic happened. After 90 minutes of chopping, dicing, blending, stirring, roasting, frying and presenting, the creative and healthy dishes were finished.

 

Simone O’ Toole a 5th year student in St. Dominic’s Ballyfermot has really taking the “ouch” out of our traditional fish and chips. She altered the traditional greasy, highly saturated fat, fish and chips option for a low fat, increased fibre and an overall healthier alternative. She also changed the traditional fries to a healthier sweet potato option with a surprise! Her tartar sauce has caught her peers’ attention as it contains no mayonnaise as she used natural yoghurt as an alternative.

Cod is a good source of heart-healthy omega-3 fatty acids which is important to lower the risk of cardiovascular diseases. Cod is an excellent source of vitamin B12, high in protein, low in fat and can be easily digested. Simone purchased all her ingredients locally in Ballyfermot and is a firm believer in “spend it here, keep it here”.

All in all it was a wonderful experience to be part of this cookery competition and now  knowing the outstanding standard of young people’s knowledge, skills and creativity, Simone and many more students here in St Dominic’s Secondary School, will try again and improve further for future competitions.  After all the secret ingredient is in the participation!

Ready for the Easter holidays? We caught these guys taking it easy in the corridors today!

The second years completed their Easter hand stitching just in time for the break next week. They certainly made themselves at home in St Dominic’s Secondary School. 

Sometimes we are tested. Not to show our weaknesses, but to discover our strengths ♥

 

It has been a busy few weeks in the kitchen here in St Dominics’s Secondary School and I suppose I have to commend the girls’ effort, hard work, commitment and courage to try new things. Late nights, early mornings,  missing wooden spoons and a few hurdles were tackled by each student over the past three weeks and it is safe to say you can’t beat the girl that never gives up. 

After school cookery classes,  over the past two weeks certainly gave the girls that extra bit of confidence with the wooden spoon.It is the easiest thing in the world to give up, but to hold it together during stressful exam time, well that is true strength! 

On the menu this week there were, Chocolate chip muffins, peppermint muffins, malteser muffins, vanilla cupcakes, coconut cupcakes, double chocolate chip muffins, cherry scones, tea scones,  treacle scones , wholemeal scones,  tomato and basil soup, farmhouse vegetable soup, potato and leek soup, chicken curry, chicken korma, tandoori chicken, beef stroganoff, chili tacos, chicken fajitas, sweet chili stir fry, red velvet cupcakes, chicken satay skewers, chicken goujons,    terry’s chocolate orange muffins, thank crunchie it’s Friday Muffins, honey glazed cocktail sausages, apple crumble, triple berry crumble to name but a few ♥

The third years are also dab hands at Appliqué and Embroidery- take a look at their designs , they have really come on leaps and bounds! 

 

Fingers crossed we will have a few big smiles in August,  keep up the good work and don’t forget the assisted study on Monday the 14th of April from 11-3 

Whenever you find yourself doubting how far you can go, just remember how far you have come!

Delighted to announce, out of 1350 students, that Simone O’ Toole (5th year) is through to the All Island Cook Off for Fine Dine at Mine 2014 in St. Angela’s College on the 7th May. Just in time for World Home Economics day today! It is amazing what you can rustle up in the kitchen here in St Dominic’s Secondary School Ballyfermot!
