I can’t believe I am in the same place.

But, it isn’t my fault.

It still takes me a long time to get out.

I see it is there.

I still fall in. It’s a habit.

My eyes are open.

I know where I am.

It is my fault. I get out immediately.

Sweet treats for a sweet young lady on her special day 🍰🎂

An early start this morning, my beautiful little cousin had her confirmation today at home in Donegal. With an electric whisk at the ready and plenty of chocolate on standby, I whipped up a few delicious treats for her big day. Given someone the present of homemade treats is a great way to put your personal stamp on a special day. Chocolate biscuit cake, homemade honeycomb ice cream, homemade vanilla ice cream, malteser cheesecakes, fresh fruit pavlova and mum’s sherry trifle is on the menu.

Recipe for no fuss ice cream 🍨🍦
500mls double cream
175g caster sugar
300mls custard (ready made)
4egg whites
1 vanilla pod

-Whisk egg whites in a large bowl with 1/2 the sugar (87.5g) until it has formed stiff peaks( inverted bowl test)
-Whip the double cream with the remaining sugar until stiff
-Split the vanilla pod lengthwise and scrap out the vanilla seeds and place into the cream mixture.
-Whisk in the custard into the cream
-Fold in the egg white mixture
-place the mixture into a steel bowl covered with tin foil or an air tight container with a lid.
-Do not shake mixture just poor in.
-Place in freezer overnight or if you are fortunate to have an ice cream maker place in for 50minutes.

*Perfect on a hot day with a wafer cone (no need for those 99’s)

Monday morning- I’m sure everyone has their “I’m ready for this week” attitude at the ready. As we have a busy few weeks ahead of us it is important to remember that there are three choices in life ladies, you can either give up, give in, or give it your all. People often say that motivation doesn’t last. Well, neither does bathing- that’s why it is recommended daily. Chin up, you have come so far already.

We are into the last stretch,  9weeks to go, open up that school bag and get your revision done while you have the time over the next two weeks. Easter revision class is on Saturday the 11th of April 2015. This will be an intensive three our revision course that will run from 10-1.00. It is compulsory that all 6th year students attend.
